  1. 250 g diced meat (beef or lamb)
  2. 1 onion
  3. 3 dried limes
  4. 1 cup kidney beans, cooked
  5. 4 bunches fresh parsley,
  6. 1 bunch fresh coriander
  7. 1 small bunch of spinach leaves
  8. 2 large leeks
  9. 1 small bunch fresh fenugreek or 1 Tbsp dried fenugreek
  10. 1 Tsp turmeric
  11. to taste Salt – pepper
  12. Vegetable oil

Steps to make Persian herb stew (Qormeh sabzi)

  1. Dice finely onion. Saute in oil until tender.
  2. Add turmeric and stir well.
  3. Add meat to the onion. Allow to brown on all sides.
  4. Chop finely the herbs.
  5. Saute the chopped herbs in oil for 15 minutes, stir frequently and set aside.
  6. Make a couple of small holes in each of the dried limes.
  7. Add cooked kidney beans,
  8. Dried limes
  9. And fried herbs to the meat.
  10. Add 4 cups of water, season with salt and pepper. Stir gently. Cover the pot with a lid and simmer for 40 minutes.
  11. Taste and adjust the seasoning before serving.
  12. Qormeh sabzi served with steamed rice or bread.
